Star Spangled Ice Cream Sandwiches

NoFussFabulousIceCreamStarSandwiches1With weather in the three digits this week, my mind has been filled with keep-cool treats for the Fourth of July. I came up with this recipe by combining three of my favorite dishes: Fried Ice Cream, Rice Krispie Squares, and Ice Cream Sandwiches. I thought what better way to celebrate our country’s Independence than combining two of my favorite all-American treats: Ice cream and a coconut twist on Rice Krispie squares! They are de-LISH! Cut them with a star-shaped cookie cutter and you have a Star Spangled Ice Cream treat that won’t be forgotten.NoFussFabulousIceCreamStarSandwiches
Star Spangled Ice Cream Sandwhiches
Ingredients:
1/2 bag of large marshmallows
1/2 c. unsalted butter
1 c. brown sugar
3 c. Rice Krispies
1 c. coconut
1/2 c. chopped walnuts
1/2 gallon of vanilla ice cream

Directions: Take ice cream out of freezer to begin melting and set aside. Place 1/2 bag of marshmallows and butter in microwaveable bowl. Microwave on high for one minute or until butter is completely melted. Stirring every 30 seconds. Similar to making Rice Krispie squares. Once butter and marshmallow mixture has been well metled and stirred, mix in brown sugar. Add Rice Krispies, coconut, and nuts. Evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Let cool. While mixture is cooking take your semi-melted vanilla ice cream that has been sitting out and using a wooden spoon press ice cream into a 13 x 9 x 2-inch pan evenly. See photo. Place pan lid or Saran Wrap on to pan and place ice cream back into the refrigerator to freeze for one hour. Once your rice krispie mixutre and ice cream have properly set, take your star shaped cookie cutter and begin cutting out your rice krispie mixture stars – two for each ice cream sandwhich. Then using the same cookie cutter, cut the ice cream into the star shape by pressing down evenly and hard. Pull ice cream out of cutter and place carefully between rice krispie mixture stars. Decorate with sprinkles as desired. Serve immediately or place covered in freezer.

My husband and his pals are having a “guys night” tonight. They have labeled the event “The Nacho Libre IBC Guys Night. ” I hope you can feel my eyes rolling. I think it’s ridiculous and hilarious. Men love being boys sometimes. But I am so happy that my man is taking time off. He works hard so he should be able to play hard. They even sent all of the wives cell phones calendar reminders that included tonight really being “Pride and Prejudice/Twilight Girl’s Night With Kids.” Needless to say, the girls are getting together tonight as well. And what is better than Pride & Prejudice and girlfriends? Well, the only thing I could think of us was Pride & Prejudice, girlfriends with strawberries and chocolate fondue.

Hello Sweet Ladies! There has been a reason I have been MIA. While Annie was out on her much deserved North Carolina Vacay, I planned on featuring No Fuss Fabulous ideas for Father’s Day, but then fate (hopefully) stepped in…. and my husband and I were matched with our adoptive birthmother!!!!!! We are over the moon. This will be our third child, as well as our third adoption and we couldn’t be more pleased. So the past week I have been running around confirming paperwork, doctor visits, and longingly looking at tiny onesies! Of course, there is the chance that our adoption could fall through, but we are not thinking about that. Our birthmother is due any day now and we just have time to be hopeful and happy. I’ll definitely keep you all in the loop as things progress!

In honor of adoption and the miracle it is, this week I’m going to featuring tips, etiquette, and ideas for throwing an adoption baby shower.

Submerged Flowers = Easy Summer Celebration Centerpieces

I love the growing use of submerged flowers as centerpieces. They are kind of the fresh/elegant/fabulous/simple/weird/awesome/modern new look in events. Not only are they simple and inexpensive to make, they create a unique conversation piece. By submerging flowers or leaves in clear glass vases, the flower’s color and details are accentuated and magnified as the light refracts through the water. They are becoming more and more popular at weddings with floating candles, but I love the idea for a summer dinner party as well.

Let’s be honest, the irony of swimsuit season being the exact same season as ice cream season is cruel. But before we dwell on it too long, let’s refer to the wise words of Erma Bombeck. “Seize the moment! Remember all those women on the Titanic who waved off the dessert cart.” Such a wise woman. I really don’t know anything about her, but I like her. I like her a lot. That’s right, ladies. Let’s not let a swimsuit hold us back from having a fabulous afternoon and a sweet taste of homemade cold cream. Let’s just do an extra lap in the pool and call it even. Life is to be enjoyed. Summer road trips and vacations have begun! Here is a little game I made that you can pull out when the whining becomes louder than the MP3 players. So before the “Are we there yet?”s are counted in the tens of thousands, get prepared with a few fun academic activities to keep your kids minds away from boredom. Hopefully this will help your family stop counting the hours till the next rest stop!
