Easy Coconut Macaroon Easter Nests

With only four ingredients, eight minutes of cook time, and a ton of festive cute-ness – these little sweet treats are a must for any Easter celebration in my book!

What you’ll need:
16 ounces shredded coconut
1 can (14 oz.) sweetened condensed milk
2 teaspoons vanilla extract
Jelly beans or candy Robin Eggs

What you do:
Mix first three ingredients together. Drop by teaspoonfuls onto generously greased baking sheets. Bake at 350° for 8 minutes. Cool coconut macaroons slightly; remove to rack. Once cooled, place candy Robin Eggs or jelly beans on top of coconut “nests.”
Makes about 4 dozen coconut macaroons.

    I’m sorry. I am a first time baker. My mom loves coconut so I think I might make these. I do not understand how the the first three ingredients make a nest shape. Do you you a cookie tray or what? I am sorry for the stupid question.

    Great question – we love questions! Here are some tips on how to make these just perfect for your mom. Parchment paper or a well greased pan works best to put on the cookie tray. Then make very small roughly round balls and place on the tray. Press your thumb in the middle to make the “nest”. REMEMBER: these spread out in the oven, so don’t press too hard and don’t make them too big. Cooking time is dependent on the size of your “nests”. Bigger nest = more time in the oven. I like mine about a tablespoon size to fit 3 egg mini candies in or one large Cadbury egg. Watch in the oven with the light one till coconut tips are barely golden. Hope this helps!

    How far ahead can I make these for a baby shower? I am using jordan almonds for an egg. I plan to use these as wrapped favors.

    Mary,

    How cute are you?!? Using these as a baby shower favor is such a cute idea. I have never tried making these too far in advance, but I would say at least two days would be completely fine as long as they were saran wrapped and put in a tupperware container. Something to keep in mind with this recipe is that quite a few people have emailed me and told me that the baking time was not quite enough. So you may have to watch them carefully and increase the baking time. Also, if you are making them for a baby shower – you probably want them to look just perfect. I would suggest while watching them in the oven, take a spoon half way through the baking time and re-sculpt the nests so they look plump and beautiful and “nesty.” I hope that makes sense. :)

    I’m just now finding this recipe, but it’s EXACTLY what I’m looking for. I have a question, if you odn’t mind. Do you think if I used a mini muffin tin that they’d come out ok? I figured it’d keep them from spreading too far, and then I’d have equal sized nests too. Wasnt’ sure if it’d make them turn out weird or not fully cooked. Or maybe I should use regular size cupcake tins?

    Thanks, Amy. I think a regular sized cupcake tin may work out splendidly! What a good idea! Check out the other reader’s comments below – most people had varying cooking times with these macarron nests and so I would watch them carefully!
