Star Spangled Ice Cream Sandwiches
With weather in the three digits this week, my mind has been filled with keep-cool treats for the Fourth of July. I came up with this recipe by combining three of my favorite dishes: Fried Ice Cream, Rice Krispie Squares, and Ice Cream Sandwiches. I thought what better way to celebrate our country’s Independence than combining two of my favorite all-American treats: Ice cream and a coconut twist on Rice Krispie squares! They are de-LISH! Cut them with a star-shaped cookie cutter and you have a Star Spangled Ice Cream treat that won’t be forgotten.
Star Spangled Ice Cream Sandwhiches
Ingredients:
1/2 bag of large marshmallows
1/2 c. unsalted butter
1 c. brown sugar
3 c. Rice Krispies
1 c. coconut
1/2 c. chopped walnuts
1/2 gallon of vanilla ice cream
Directions: Take ice cream out of freezer to begin melting and set aside. Place 1/2 bag of marshmallows and butter in microwaveable bowl. Microwave on high for one minute or until butter is completely melted. Stirring every 30 seconds. Similar to making Rice Krispie squares. Once butter and marshmallow mixture has been well metled and stirred, mix in brown sugar. Add Rice Krispies, coconut, and nuts. Evenly press mixture into 13 x 9 x 2-inch pan coated with cooking spray. Let cool. While mixture is cooking take your semi-melted vanilla ice cream that has been sitting out and using a wooden spoon press ice cream into a 13 x 9 x 2-inch pan evenly. See photo. Place pan lid or Saran Wrap on to pan and place ice cream back into the refrigerator to freeze for one hour. Once your rice krispie mixutre and ice cream have properly set, take your star shaped cookie cutter and begin cutting out your rice krispie mixture stars – two for each ice cream sandwhich. Then using the same cookie cutter, cut the ice cream into the star shape by pressing down evenly and hard. Pull ice cream out of cutter and place carefully between rice krispie mixture stars. Decorate with sprinkles as desired. Serve immediately or place covered in freezer.
