Champagne Frosted Cupcakes Ring in the New Year

Champagne frosted cupcakes bring in the New Year with sparkle! It’s easy to dress up vanilla or strawberry cupcakes with just a little bit of this frosting. Turn a few of your martini glasses upside down to show off your creations! Below is the easy recipe. Don’t forget a little bit of edible glitter to ring in 2010!
For those who don’t drink alcohol, you can purchase non-alcoholic Champagne at Whole Foods, as well as Sam’s Club.
Champagne Frosting
3/4 c Shortening
3/4 c Butter or margarine
2 T Champagne (non-alcoholic versions are available for non-drinkers)
4 1/2 c Powdered sugar
In a bowl beat shortening and butter or margarine until combined. Beat in champagne. Beat in sifted powdered sugar.
If necessary, beat in additional champagne to make frosting spreading consistency. Add strawberry, orange, or vanilla flavoring if you wish.

Love the option of adding non-alcholic champagne or sparkling flavors to make an exciting new cupcake frosting! What frosting tip did you use and how did you make them so pretty?
Annie,
Use an extra large closed drop flower decorating tips! I like Wilton’s 1F flower tip. It makes super easy adorable flowers! Just squeeze and pull, squeeze and pull. For the final touch sparkle on a little edible glitter.
Extra tip for left handers: 107L would work perfectly as well.
What a good idea! They look super yummy. I like the idea of using champagne I gotta try this! Thanks!
I love this recipe! What a great idea for our New Year’s celebration! I’d like to try making cupcakes with champagne in the batter, as well — any fabulous ideas? =]
Megan,
There are quite a few champagne cake recipes online that I haven’t tried but sound delicious! The one tip I have heard about champagne cake is that you generally need to serve it same day – otherwise it can taste very poor. Let me know what recipe you try and how it turns out!
Happy New Year,
Loralee
Thanks, Loralee.
I did come up with something, and I posted it on my blog: http://goldiebell.blogspot.com/2009/12/new-years-toast.html.
I also linked back to this post for the frosting recipe — hope you don’t mind =]
